Castello Blue is a creamy blue cheese with a mild aroma and abundant blue mold marbled cut surface. The cheese is also called blue mold and blue cheese. The texture is smooth, creamy and spreadable. The taste is mild with clear saltiness and bitterness and it develops without becoming strong. The long ripe aftertaste has hints of grapefruit. Castello Blue is an excellent dessert cheese for your cheese plate. The cheese tastes especially good with rye bread or rye biscuits, ripe pears & plums or sweet marmalade. Serve with hop-aromatic beer with bitterness or a berry and soft red wine.
